Mornings are so busy that I love any kind of breakfast that you can prep ahead of time. I’ve been a fan for years because they take just five minutes to prep, and you can make a batch a few days in advance so you can have tasty breakfasts for a few days a week.
Why this recipe works
With less than ten ingredients, this quick recipe can be whipped up in whatever kind of container you have–think a mason jar, in individual glass containers or in a large container that you can grab a portion from every morning.
Let the fridge do the magic and soften the oats and help the ingredients mingle together. I actually love the way the raspberries soften and turn almost into a raspberry swirl situation.
Ingredients and toppings
Here’s what you’ll need to make this recipe:
- Whole rolled oats are my go-to for overnight oats, but you could also use quick oats. They will just have a slightly different texture. If you’re gluten free, simply opt for gluten free oats.
- Raspberries can either be fresh or frozen. The fresh will hold their shape and texture more than frozen, the frozen will dissolve a little bit but are equally delicious! I’d go with whatever is in-season. You could also use any kind of frozen fruit like blueberries (here’s my blueberry overnight oats recipe).
- Yogurt can be regular or Greek yogurt helps make these oats creamy. You can use a dairy free, coconut yogurt for a vegan option.
- Milk can truly be whatever you have on hand, regular 2% milk or a vegan alternative like almond milk or oat milk will work well.
- Peanut butter is one of the ingredients that will add some creaminess and help make this a satisfying breakfast (protein!).
- Almonds I like to use slivered almonds because I like the texture they add, but you could use any kind of chopped almonds, or other nuts like cashews or walnuts.
- Toasted coconut adds some nice sweetness, if you don’t have any, you could also use some honey or maple syrup for sweetness.
- Cinnamon and vanilla extract are just there for extra flavour and are key to giving these a delicious taste that you’ll want to eat over and over again.
Expert tips
- Overnight oats will last up five days in the fridge, so they are the perfect recipe for your weekend meal prep.
- Feel free to mix up the raspberries with another type of berry like a blueberry, strawberry or blackberry. Frozen berries are also a great choice during the winter months.

Raspberry Overnight Oats
Ingredients
- ½ cup whole oats, quick oats can also work
- ½ cup raspberries, fresh or frozen
- ¼ cup Greek yogurt
- ½ cup milk, regular, oat or almond milk
- 1 tablespoon creamy peanut butter
- 1 tablespoon chopped almonds, or cashews or walnuts
- 1 tablespoon toasted coconut
- ¼ teaspoon cinnamon
- ⅛ teaspoon vanilla extract
- 1 teaspoon maple syrup or honey, optional, for sweetness
Instructions
- In a jar, combine all ingredients. Cover and refrigerate overnight.
Notes
- You can prep these 5 days ahead of time and they will last in the fridge.
- If you want to keep some texture, you can save the nuts for topping just before eating.
