Cold Brew Iced Coffee with Mocha Ice Cubes

Whether it’s hot or cold, I’m obsessed with coffee and this cold brew iced coffee with mocha ice cubes is my new favourite way to cool down this summer. If you follow me on Instagram, you know that my life is positively packed with coffee. I’m a one coffee in the morning kind of girl and then one in the evening. In university, coffee would help me concentrate and power through my hours of essay writing, but these days, it’s more about taking a few minutes in the morning and the evening to wakeup or decompress over my favourite drink, it’s the best way to bookend my day. For the past little while I’ve been enjoying Lavazza’s Gran Selezione ground coffee and enhancing it’s already intense, rich flavour and chocolate undertones with these incredibly easy mocha ice cubes.

The first time I really started to get into coffee was a few years ago when I was working in the film industry. If you didn’t know it already, coffee is the driving force of a film set. There is always a vat of coffee at the ready. If there wasn’t, you’d hear about it and I would know because I spent my fair share of time making that coffee. Those freezing cold night shoots in February would not be possible without coffee, trust me.

Now the coffee on a set is not the greatest, but I’m happy to say that I have upgraded since then to Lavazza’s flavourful and delicious blends, and in the summer, it’s all about iced coffee. I’ve spent far too much money buying iced coffee that this year, I’m determined to make my own at home. Do you want to join me for this challenge? Recipe Breakdown

Cold brew coffee is the only way to enjoy coffee in the summer. These mocha ice cubes will not water down your coffee as they melt, but they will impart a slight chocolatey flavor leading to a simple, no-fuss iced mocha.

Ingredients

    For cold brew coffee:
  • 3 parts water
  • 1 part coffee grounds
  • For mocha ice cubes:
  • 2 cups warm coffee
  • 2 tbsp cocoa powder
  • 1 tbsp brown sugar

Instructions

    For coffee:
  1. In a large jug or jar, combine coffee and water. Cover and refrigerate for 12 hours.
  2. Stir with a spoon and strain.
  3. For mocha ice cubes:
  4. Whisk warm coffee with cocoa powder and brown sugar.
  5. Freeze in ice cube tray until frozen.
