Shrimp with Spicy Garlic Sauce

This is the time of year when easy and quick healthy dinners are a must, take this shrimp with spicy garlic sauce for example. It’s a take on a takeout favourite, that can be made much healthier at home. Plus it will take longer for this to be delivered to your house than to actually make it yourself. Granted you had the foresight to thaw your shrimp and have all the ingredients on hand – which why meal-planning is such an important thing!

Now the truth is that even though I have a food blog and love to cook, sometimes, I just don’t feel like it. I would rather lay on the couch watching a double feature of so-bad-they’re-good Christmas movies and eating popcorn with too much butter. This happens more often than I’d like to admit, but that’s real life, friends. I have definitely fallen off the healthy eating wagon, especially when it comes to snacks, it’s nachos all the time. And donuts. And holiday ginger molasses cookies. But that’s what January is for, right? That’s when we reset and dig into those healthy green smoothies and vegetarian quinoa salads.

This is a simple and healthy dinner recipe – one of those that you don’t have to put much thought or effort into. Shrimp with Spicy Garlic Sauce makes healthy eating easy and fast. Sometimes I’ll eat these shrimp on their own, but if I want a more substantial dish, I’ll eat it over a bowl of rice. The shrimp are pretty spicy, but if you aren’t really a fan of spice, you can always use less sriracha, but to me, the more the better.

Ingredients

  • ¼ cup soy sauce
  • 3 tbsp sriracha
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • 2 tsp honey
  • 1 tsp ground ginger
  • ½ tsp black pepper
  • ½ tsp cumin
  • 2 tbsp canola oil
  • 4 garlic cloves, minced
  • 2 lbs frozen raw shrimp, thawed (shell removed, tails on)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a small bowl, whisk together soy sauce, sriracha, vinegar, sesame oil, honey and spices. Set aside
  2. In a large pan, heat oil over medium-high heat. Add garlic, cooking until fragrant about 30 seconds to 1 minute. Add reserved soy mixture. Bring sauce to a boil and continue cooking until thickened, to your desired consistency. I found it took about 3-5 minutes. Stir continuously to avoid burning.
  3. Add shrimp, cook with garlic and sauce about 2 minutes per side or until pink and cooked through.
  4. Serve over a bowl of rice and garnish with green onions.

    Another amazing recipe by Miss Living Lou...I am definitely going to make this (but I think I'll skip the "hot sauce")...Well, maybe I'll add "a little bit of hot sauce" since it will give it a "kick" without burning my mouth! More can be added when served, if necessary, right?
