Spicy Chicken Skewers

Spicy chicken skewers have quickly become one of my go-to quick, weeknight dinner recipes. Now, if you’re a frequent visitor to my blog, you’ve probably noticed that I post lots of recipes involving chicken. Chicken is just so fabulous, don’t you think? It’s so versatile and I like how you can turn chicken into pretty much whatever you want. If you have chicken breasts, why not make a delicious chicken stew? When I have chicken thighs, I like to roast them up perfectly in a hot oven. And you can’t go wrong with a beautiful lemon and thyme roast chicken for Sunday dinner. I usually find myself using chicken for weeknight meals, resulting in quick and simple dishes. These Spicy Chicken Skewers would be perfect for the Shine Supper Club because despite being easy to make with just five ingredients, they are always full of flavour.

Since the base of the sauce is sriracha sauce, which is a popular Asian chili sauce, these chicken skewers are spicy. I find that they are a nice little pick me up dinner to keep you going the rest of the week. The addition of dried herbs gives the chili sauce a distinct flavor and a bit of a Mediterranean twist that I know everyone will love. Plus, skewers are just a fun way to eat dinner, even in the dead of winter with no barbecue in site, threading some chicken onto skewers gives me a bit of a pick me up.

Sriracha has quickly become one of my favourite ingredients and it’s so trendy right now. I even use it as a flavour enhancing agent in my sriracha roasted cauliflower. I always keep a bottle in the fridge because it makes whipping up quick and healthy five ingredient dinners a breeze. These spicy chicken skewers could easily be cooked on a grill as well as in the oven, so the choice is really up to you. On the grill you’ll get that extra bit of flavour from charring – just be sure to oil your grates properly before starting, it will make flipping the chicken skewers much easier.

Ingredients

  • 1 lbs chicken breasts, cut into 1 inch pieces
  • ¼ cup sriracha (chili sauce)
  • 1 clove garlic, minced
  • ½ tsp dried thyme
  • ¼ tsp each of salt and pepper
  • lime juice for serving

Instructions

  1. Preheat oven to 375F and spray a baking sheet with oil.
  2. Thread onto four skewers. In a bowl, whisk sriracha with garlic, thyme, salt and pepper.
  3. Brush sauce over all sides of the chicken and bake in the oven for 15 minutes. Turn the chicken over and bake for another 15 minutes, or until chicken is fully cooked.
  4. Sprinkle with a little lime juice and serve.
