These slow cooker chicken caesar salad sandwiches are one of my go-to, crowd-pleasing recipes for the summer and I think they will become one of yours, too. There are so many things that I love about this recipe but my favourite thing is that as your slow cooker is doing all the work, you’re not heating up your kitchen by turning on the oven. You’re also not burning off your eyebrows turning on the grill. It’s a win-win situation. Another bonus? With this recipe, you can make a huge amount of these sandwiches to serve a crowd at a backyard barbecue or a potluck. Just set up the slow cooker in the morning, and then half an hour before dinner time, add your caesar dressing and you’ve got yourself a meal fit for a king (or a group of rowdy children if that’s more your life).

There are also so many things I love about the summer, but after a long, cold and seemingly endless winter, that first hot day feels like a miracle. The longer light makes everything better – and not just from a food photography perspective but from a life perspective. When you get home from work or school it’s like having a whole entire day left to get things done or enjoy the backyard. In the winter, it’s dark when you leave in the morning and dark when you get home; like feels like school, sleep, repeat or work, sleep, repeat. It’s downright miserable.

The fresh produce of the summer is another story. It lets me develop flavourful recipes like healthy berry sorbets and summery dinner salads. We’re fortunate that we can get fresh produce throughout the winter, because the fruits and vegetables that are native to Canada or Ontario during that time of year are pretty scarce. Beets, carrots, parsnips, potatoes…those sort of root vegetables. Which are delicious, but nothing like local, sweet strawberries or cherries. You know what I mean?

It seems as if last weekend, summer touched down in Toronto and I love it, I’m ready for it. I just want to spend all of my time outside, soaking up the sun. Don’t they say that your body needs the vitamin-D? Whether that means picnics and bike rides with friends, long walks with Soph or afternoons reading in the backyard (I’m reading Daring Greatly by Brené Brown). Is there anything better than summer weekends? I’m already counting down the days until this weekend, the first long weekend of the summer! You’ll most likely find me outside, maybe up north, with my slow cooker cooking away these chicken caesar sandwiches.

Ingredients

  • 4 chicken breasts
  • 2 tsp garlic powder
  • water (to cover chicken)
  • ½ - 1 cup caesar dressing*
  • ¼ cup grated parmesan cheese
  • 1 cup chopped fresh parsley
  • 4 green onions, sliced
  • lettuce and buns for serving

Instructions

  1. Add chicken breasts and garlic powder to slow cooker.
  2. Cover chicken breasts completely with water and cook on low heat for 4-5 hours.
  3. Remove chicken to a bowl and shred with two forks. Discard water.
  4. Add chicken back to slow cooker insert with caesar dressing and parmesan.
  5. Cook on low for 30 minutes. Mix in fresh parsley and green onions before serving.

Notes

*Use as much dressing for desired consistency. Start by mixing in ½ cup and add more as necessary.

    This recipe was good. I made it today. The parsley was way too much for my taste...I would have been fine with 1/4 cup.
