Spiced Chicken Drumsticks

Indian Spiced Chicken

This recipe for Indian spiced chicken drumsticks combines a few of my favourite Indian spices for a crispy and flavourful dinner. I’ve posted a few chicken drumstick recipes over the years and it seems as though you like them as much as I do. This makes me happy because I feel like I could develop endless recipes for drumsticks! I just love how crispy the skin gets and how much fun they are to eat. There is something about a satisfying meal that you can eat with your hands, don’t you think? Plus, I think you eat with your eyes as much as your nose and mouth and I love the way the spices in the rub give these such a beautiful, enticing colour.

This recipe uses my favourite technique of roasting chicken which I discovered recently. Roasting it at a super high temperature to crisp up the skin is the only way to make drumsticks – well, unless you’re slow cooking them that is. You’ll remember this roasting technique from my classic standby recipe of Thyme Chicken Drumsticks. With this recipe, I’ve decided to use this foolproof technique and explore a different flavor profile. Digging a little deeper into my spice drawer for aromatic spices like cumin, turmeric and ginger – these are the stars of this recipe. It’s amazing what a simple spice rub can do for boring old chicken. Trust me.

Cumin, turmeric and ginger are the stars of many dishes on my site, like my Moroccan chicken stew, over the years I’ve loved experimenting with different spices. A spice rub is a really easy way to add a ton of flavor to meats, without much work at all. I often use this technique on the grill for pork chops or for other roast chicken dishes. I highly recommend keeping a well-stocked spice drawer with fresh spices (give them a sniff and if they smell at all stale or not very powerful, dump them and replace them). Cumin, turmeric and ginger aren’t spicy at all, so no need to worry about the heat level of this dish.

In other news, this little gal, my sweet Morkie pup turns two today. Doesn’t she look adorable in her new sweater? It’s like it was made for her. I’m obsessed. Soph is just the cutest. And she is happy to indulge my cute sweater buying habit (yes, I am that person). It’s amazing how much a dog can brighten up your life. Before Sophie, I had never had a dog, it was something I had always begged my parents for but it never happened. I have to say though; getting Sophie is probably one of the highlights of my life so far. The unconditional love is incredible and there is no one more excited to see you when you come in the house, it just brightens my day.

Ingredients

  • 8 chicken drumsticks
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 tsp turmeric
  • ½ tsp salt
  • ¼ tsp ground cloves
  • ¼ tsp ground fennel
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425F. In a small bowl, whisk together spices. Place chicken in a bowl, coat with spice mixture. Toss with olive oil.
  2. Place on a baking sheet and cook for 20 minutes. Flip over and cook for another 18-20 minutes.

    I love these flavors together! And you're right, crisping the skin on the drumsticks is the BEST way to make them! I know this sounds terrible, but the skin is always my favorite part of the chicken. What an easy recipe too :-)
