10 Uses for Leftover Pesto

Have you ever had that meltdown around 6pm when you realize that despite what you thought was a well-stocked fridge; you have nothing to eat for dinner? That’s when I grab a jar of pesto. It is hands down the ultimate condiment. It’s really easy to make yourself (check out my recipe for homemade basil pesto), but you can also pick up a jar at the store – plus there are so many flavours like sun-dried tomato and even olive. I recommend that everyone have a jar of pesto in the pantry or fridge at all times. It’s a simple way to add a burst of flavor to any dish because that one jar can be the starting point of so many dishes. Whether that be an appetizer, lunch or dinner, you name it you can make a meal out of it with the help of this flavour packed condiment. Here are the top 10 uses for leftover pesto.

A few of my favourite ways to use pesto are to add a burst of flavour to my dishes.

We know and love pesto as a pasta sauce, so why not up your pasta by making this pasta recipe packed with spring veggies like asparagus and protein from white beans.

Swirling pesto into soup is one of my newest uses for this flavourful condiment, try it out for yourself.

Frittatas are one of my favourite healthy, protein packed breakfasts or lunch to bring to class or work. In this recipe, I whisked some pesto into the egg mixture.

I really believe that roasted potatoes are the perfect side dish. I mean, who doesn’t love roasted potatoes? They are crispy and incredibly easy (not to mention a huge crowd pleaser). For this recipe, I bumped up the flavour by tossing the potatoes with some chili flakes and pesto. They have become a family favourite and I may them almost weekly in the winter.

    I LOVE pesto!! w. some spaghetti squash?... YUM! What a great way to mix it up with some unexpected ways to enjoy it!! :)
