Muffins that taste like donuts! These soft, spiced muffins get dipped in butter and rolled in cinnamon sugar for all the flavor of a donut with none of the frying.
Preheat oven to 350F and grease or line a standard muffin tin.
In a large bowl, whisk together 1 ¾ cups flour, 1 ½ teaspoons baking powder, ½ teaspoon salt, ½ teaspoon nutmeg, and ½ teaspoon cinnamon.
In a separate bowl, whisk ⅓ cup oil, ¾ cup white sugar, 1 egg, and ¾ cup milk until smooth. Pour over the dry ingredients and gently mix until just combined — a few small lumps are fine, don't overmix or the muffins will turn dense.
Divide batter evenly among muffin cups and bake until a toothpick inserted in the center comes out clean, 15-20 minutes.
While the muffins bake, melt the ¼ cup butter for the topping in one bowl, and stir together the ⅓ cup white sugar and 1 tbsp cinnamon in another.
Once muffins are cool enough to handle, loosen with a knife and turn out of the pan. Dip the top of each muffin in melted butter, then roll in the cinnamon sugar to coat. Cool on a wire rack.
Notes
Mix the batter gently and just until combined for a tender crumb.
Dip and roll the muffins while they're still warm so the butter and cinnamon sugar stick properly.
