Brush one side of each baguette slice with honey. On half the slices, evenly sprinkle half the grated cheese, top with kimchi then sprinkle with remaining cheese. Top with the remaining honey-brushed slices of bread, honey side needs to be facing the cheese.
Heat a non-stick medium pan over medium heat. Melt 2 tablespoons of butter, add sandwiches (about four at a time) and cook for 3-5 minutes, until golden brown on the bottom. Lower the heat to avoid burning. Flip and cook until golden brown on the other side and the cheese has melted through, another 3-5 minutes. Repeat with remaining sandwiches and butter.
Notes
Work in batches of about four so the pan doesn't crowd and everything cooks evenly.
Thin baguette slices toast quickly, be sure to lower the heat if the bread is browning before the cheese fully melts.
