Medjool dates, bacon and chocolate are the perfect flavour combination for a delicious cookie!

of bacon
,
cooked at 375 degrees for 20 minutes, then chopped.

butter

softened

cup
brown sugar
2
eggs
1
teaspoon
vanilla extract
1 ½
cups
all purpose flour
1
teaspoon
baking soda
1
teaspoon
baking powder
½
teaspoon
salt
2
cups
rolled oats
1
cup
chocolate chips

halved and pitted
Instructions
Preheat oven to 325. Line baking sheets with parchment paper.
In the bowl of a stand mixer, cream butter and sugar until light and fluffy.
Beat in eggs, one at a time. Then add vanilla.
In a large bowl, whisk together flour, baking soda, baking powder and salt.
Add flour mixture to butter mixture in two additions.
Stir in oats, chocolate chips and bacon pieces.
Form cookies into 1 ½ tablespoon balls. Press half a medjool date onto each cookie.
Bake for 14-16 minutes or until edges are golden.
Allow to cool on baking sheet for 5 minutes before removing to a rack.
