Beer Battered Bacon Waffles

Ingredients
For waffles:

whole wheat flour

granulated sugar

baking powder

baking soda

Samuel Adams Boston Lager

cup
milk
¼
cup
unsalted butter
2
teaspoon
vanilla extract
1
egg
10
slices
of cooked bacon
,
chopped into pieces
For Spicy Beer Caramel Sauce:
1 355
ml
bottle of Samuel Adams Bostom Lager
1 ½
cups
packed brown sugar
1
teaspoon
chili powder
½
teaspoon
cayenne pepper
¼
cup
unsalted butter
1
cup
cream
¼
cup
maple syrup
2
tablespoon
corn starch + 2 tablespoon water
Instructions
For waffles:
Preheat waffle iron (I usually set mine on the 4th setting)
Whisk together flour, sugar, baking powder, baking soda and salt.
In a medium sized pot, heat beer, milk, butter and vanilla extract until warm and butter has melted.
Remove from heat and carefully whisk in the egg.
Gently stir in in the wet ingredients to the dry ingredients.
Stir in bacon pieces.
Cook in waffle iron.
For Spicy Beer Caramel Sauce:
In a medium sized pot, bring beer, brown sugar, chili powder and cayenne pepper to a gentle boil.
Simmer for 30 minutes (stirring frequently). The beer and sugar mixture will reduce.
Remove from heat and stir in butter. Add cream and maple syrup.
Put sauce back over high heat, add cornstarch. Stirring until thickened. Remove from heat.
