Meet the perfect fall breakfast, think apple pie meets oatmeal! This recipe for apple cinnamon oatmeal is made on the stovetop and is ready in just ten minutes with fresh apples, walnuts and cinnamon. Top with peanut butter for the perfect start to your day.
In a small pot, heat water and milk over medium-high heat. Bring to a low boil until you start to see bubbles on the edge of the milk and water mixture.
Add oats, apple, walnuts, brown sugar (if using), vanilla extract, cinnamon and salt and return to a boil. Reduce heat for a simmer and cook, stirring often, for 10 minutes until apples have softened and started to break down and oatmeal has thickened and is beginning to stick to the bottom of the pot.
Remove from heat and serve with desired toppings; I like to add peanut butter, yogurt, honey, freshly chopped apples and a little extra cinnamon.
Notes
I use 2% milk in this recipe, but feel free to use your favourite dairy alternative or just water.
The water and milk won't come to a rolling boil, so look for indicators along the border of the pot, you should see small bubbles which are a good sign that it's the right time to add the oats.
If you prefer a runnier texture to your oatmeal, you can add an extra splash of milk or more water.
