Ingredients

farro

finely chopped

cucumber
,
quartered and sliced

green onions

sliced
⅓
cup
chopped parsley

tablespoon
chopped mint
Dressing:
2
tablespoon
olive oil
2
teaspoon
lemon juice
½
teaspoon
Dijon mustard
¼
teaspoon
salt
Instructions
Cook farro according to package directions. Cool.
In a large bowl, whisk ingredients for dressing. Add farro, tomato, cucumber, onion and herbs. Toss and serve.
