4medium sweet potatoes, washed and cut into eighths
½teaspoonsalt
1cupbuttermilk
2tablespoonbutter
¼cupblue cheese
1tablespoonthinly sliced fresh chives or green onion
Instructions
Boil salted water in a large pot (use about 1-2 teaspoon of salt in the water). Add sweet potatoes and cook for 15 minutes or until soft enough to mash. Drain and return to pot.
Add salt, buttermilk and butter. Mash using a potato masher until desired texture. While still warm, stir in blue cheese and garnish with chives.
