Slow Cooker Chicken Legs & Sun-dried Tomatoes

Ingredients

  • 10 chicken legs
  • ½ tsp salt
  • ¼ cup sun-dried tomatoes packed in oil, chopped
  • ¼ cup water
  • 2 tbsp oil from sun-dried tomatoes
  • 1 tbsp tomato paste
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • ½ tsp dried basil
  • ¼ tsp hot chili flakes

Instructions

  • Season chicken legs with salt and place in slow cooker insert.
  • In a small bowl, whisk sun-dried tomatoes, water, oil, tomato paste, garlic, Dijon, basil and chili flakes. Pour over chicken in slow cooker. Cover and cook on high for 4 hours.
  • Serve and drizzle additional liquid overtop as a sauce.
