Grilled Eggplant Skewers

  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp chili flakes
  • ¼ tsp salt
  • 1 eggplant, cut into 1-inch cubes
  • 18-20 mini skewers, soaked in water for 20 minutes


  • Preheat grill to medium heat.
  • Whisk olive oil with garlic, chili flakes and salt.
  • Toss with eggplant, and skewer.
  • Grill for 1-2 minutes per side or until grill marks appear.
  • Serve immediately.
