Potato Salad with Asparagus

Ingredients

For salad:

  • 1 lb new potatoes, halved
  • 1 lb asparagus, cut into 1-inch pieces

For dressing:

  • 2 tbsp mayonnaise
  • 1 tbsp grainy mustard
  • 1 tsp white wine vinegar
  • 1 tsp honey
  • ¼ tsp salt

Instructions

  • Boil water in a large pot. Add new potatoes and cook for 7 minutes.
  • Add asparagus, and cook for an additional 3 minutes. Drain.
  • Meanwhile, in a large bowl, whisk ingredients for dressing.
  • Add potatoes and asparagus to dressing and toss to coat. Serve immediately.
