These easy oven baked beef fajitas are made on a sheet pan with flank steak, bell peppers and onions. With a simple 30-minute marinade, and less than 25 minutes of cooking time this is easy enough to do on a weeknight.
In a large bowl, combine all ingredients for marinade. Reserve ¼ cup.
Add the flank steak, cover and refrigerate for at least 30 minutes to 3 hours.
When ready to cook, toss vegetables with reserved ¼ cup of marinade. Preheat broiler and line a baking sheet with aluminum foil. Dump vegetables onto pan, and arrange evenly.
Broil vegetables for 8 minutes. Carefully place a wire rack on top of vegetables. Place flank steak on top, broil for 7 minutes, flip and broil another 6-7 minutes of until meat reaches an internal temperature of 130F-135F.
Thinly slice against the grain and serve with salsa and avocado.
Notes
For medium rate flank steak, you're aiming for 130-135F.
Let the steak rest for ten minutes after it’s done cooking and slice against the grain to avoid chewy meat.
