Raspberry overnight oats are an easy, make ahead breakfast with fresh or frozen raspberries, peanut butter, almonds and yogurt. This is the perfect way to start your day and keep you full until lunch--and it only takes ten minutes to prep!

Ingredients

cup
whole oats
,
quick oats can also work

cup
raspberries
,
fresh or frozen

cup
Greek yogurt
½
cup
milk
,
regular, oat or almond milk

tablespoon
creamy peanut butter
1
tablespoon
chopped almonds
,
or cashews or walnuts
1
tablespoon
toasted coconut
¼
teaspoon
cinnamon
⅛
teaspoon
vanilla extract
1
teaspoon
maple syrup or honey
,
optional, for sweetness
Instructions
In a jar, combine all ingredients. Cover and refrigerate overnight.
Notes
You can prep these 5 days ahead of time and they will last in the fridge.
If you want to keep some texture, you can save the nuts for topping just before eating.
