I think I’ll always look back on February 2016 fondly – yes, there were a couple of things that weren’t the most ideal that happened, but looking back at the month as a whole, the good stuff definitely overshadows the bad. It was the month where I ate nachos and bagels more than any other food, drank copious lattes at my favourite neighbourhood cafes, caught up with old friends, continued our tradition of seeing a Beatles album preformed by Classic Albums Live with my mom and sister (and took plenty of silly photos – ha). I also visited one of my best friend’s in New York with my sister, filmed videos for my YouTube channel (go subscribe, they are coming soon!) and still managed to get lots done for Living Lou, oh and I got a job, too! It was a seriously packed month and it even had Leap Day – which is the best holiday because it only comes every four years, I mean talk about buildup. My sister and I love to celebrate and this year I opted for the classic Leap Day risotto (which I have decided is now a Leap Day tradition) – I’m going to share the recipe in this month.
Let’s take a look back at some of the wonderful goings-on in February.
February 2016 Recipes
As great as February was, I found myself suffering from a hint of writer’s block so I only shared two new recipes – my gluten-free vegetarian and zucchini lasagna and my one-pot mushroom pasta for my friends at Mushrooms Canada.
I already touched on many of the highlights of February, but spending time with my sis and visiting our longtime friend in New York (we grew up together and our parents knew each other in high school!) was definitely top of the list. She’s been living there for the past year and a half so we were able to check out some of the best spots. There was lots of food, lots of dancing and lots of laughs.
Also, that pizza up there? It’s from one of my favourite spots in Toronto, Pizza Libretto. They have one of the best lunch specials, highly recommended if you find yourself around one of their locations.
One year ago: Quick and healthy with 5 ingredients – miso baked salmon parcels.
Three years ago: One of my favourite recipes I make at least once a month: avocado feta dip with jalapeno.
Four years ago: Add a touch of decadence with my parmesan popcorn.
Five years ago: My ultimate recipe for chili con carne.
