I’ve been writing these monthly-ish recap posts for an entire year now, which I’m super happy about because I have really enjoyed sharing more of a glimpse into my life outside of the time I spend in the kitchen. I feel like not only is it a nice way for me to look back on things and remember smaller moments, but it’s also a way for you to get to know me a little more. I hope you enjoy reading these as much as I love writing them!
I celebrated by 23rd birthday in April, and other than coming down with a fever, it was a wonderful birthday, and celebration in general. I can’t believe that I’m 23–it feels so weird to leave 22 behind, I’m not really sure that I was quite done with that age. Have you ever felt that way before? I feel like I could have used another couple of months as a 22 year old. For some reason 23 just feels more serious in a way. Maybe it’s an odd number thing. I don’t know. I feel like I’ve heard from quite a few people that 23 is an odd age, it’s such an in-between period. For me, 21 was a bit of all over the place and riddled with stress and anxiety, while 22 was a welcome break from that, and for the most part, pretty smooth sailing. Even when it didn’t seem like they would, things somehow worked out.
April 2016 Recipes
Five new recipes in April (and some of my favourites ever like my lettuce wraps)! I always try to share a variety of recipes, but I feel like this month I hit the perfect balance, there was seasonal fare like roasted radishes, a healthy gluten-free (and vegan) three bean salad, I shared a new technique and light dessert with my recipe for macerated strawberries, and of course, something on the decadent side the BEST ever chocolate chip pancakes.

Birthday celebrations take the cake (ha!) as one of my favourite moments of April. After a couple of crazy weekends, I needed a bit of a break so I headed to a favourite 24-hr diner in Toronto for a sleepy, conversation-filled night with one of my best friends (also, can you tell we went to film school? He’s the master of the #meta photo above, ha!). As the days finally start to get warmer and I’ve been enjoying massive iced coffee, on Saturday I headed out to Elora to catchup with some of my favourite bloggers, we had a wonderful afternoon at the brewery and bread bakery out there. Finally, my friends Ceri and Laura of Sweet Potato Chronicles hosted a wonderful event with Minute Rice where we got to cook a couple of recipes and learn all about weekday cooking strategies! Talk about fun.
A little hint at what’s to come this spring and summer. I’ve been working on some delicious recipes that I can’t wait to share with you, and there are a couple of exciting things in the works…!
