It’s almost that time of year – burger time! I love a good hamburger, but to be quite honest, a lot of times I would rather eat it without the bun. That’s when I started creating these burger salads. You get all the flavours of a hamburger without the bun (and they aren’t as messy as a traditional burger). You can put all of your favourite burger fixings into the salad, I always have tomato, red onion and lettuce in mine and then I’ll add whatever other vegetables I feel like. For this one, I added some snow peas because I had a bunch lying around in the fridge. You could add broccoli, red pepper or avocado and you could even use kale instead of lettuce if you wanted. I like to take the mustard flavour and incorporate that into the dressing, a nicely balanced sweet and tangy honey mustard dressing is the perfect match for this salad.
I’m really looking forward to the summer; the warm weather, the afternoon cookouts, not to mention the endless burgers and grilled vegetables. For this burger salad I used beef burgers from Life Choices Foods, which I quite liked because they are a frozen burger that is handy to have if you have lots of guests coming over. You won’t have to worry about gluten either because they are gluten-free which meant my mom and sister can join in on the burger salad and honey mustard dressing fun.
With that in mind, I do still like to indulge in a good burger every now and then. Case in point last week.
