Sorry for my absence last week, things have kind of slowed down in the Living Lou kitchen because of the end-of-semester-craziness. This semester has been brutal. My professors warned us that it was going to be the hardest semester of all 4 years, and boy, were they right. Between my troubled documentary (which has turned out wonderfully and is screening on Wednesday!) and a couple time-sucking assignments, I’m pretty much all out of juice. Studying for finals has been a challenge. Doing anything other than binge-watching shows on Netflix has been a challenge. I think this semester has changed something in me because I watched The Masters today and enjoyed it. I need a vacation.
Anyways, I’m always trying to eat healthier and have more fruits and vegetables in my diet, which means vegetarian meals are kind of the answer. I’ve put together five of my favourite easy vegetarian dishes that fit the bill for any weeknight meal or meatless Monday.
Roasted Red Pepper Pasta is one of my absolute favourite sauces because it’s so easy. You just throw everything into the oven to roast and then puree in a blender. It couldn’t get much simpler.
Rice and Beans makes a great side dish for a Mexican main, but it also makes a pretty good meal on its own.
Herbed Pasta with Garlic and Walnuts is something that I made years ago and it’s great for spring where you’re craving fresh flavours and herbs.
Moroccan Vegetable Soup I know it’s technically spring, but here in Toronto I’m sure that we have still have a few cooler days coming up.
Crustless Spinach Quiche is a classic, quiche are ridiculously forgiving and simple for a weeknight. One of my go-to dishes during busy weeks.
