Green beans in vinaigrette is the perfect quick, make-ahead side dish for Thanksgiving.



A quick side dish recipe today, green beans in vinaigrette! Green beans are one of my favourite vegetables, I tend to just roast them at 400F for about 12 minutes with a drizzle of olive oil and a pinch of salt until they are brown and crisp. This is the perfect side dish for Sunday lunch and sometimes I’ll even eat a pan of green beans for dinner, they are that good. This recipe that I’m sharing today is completely different than your typical green bean recipe because it is served cool. There are a couple of reasons why these green beans are the perfect Thanksgiving side dish.

First of all, like I mentioned, this recipe is served cool which means you can prep them ahead of time which takes one more thing off that never-ending Thanksgiving to-do list. It also means that the oven and stovetop will be free because we all know you have to make stuffing in the oven and of course your turkey (unless you want to cook your turkey in the slow cooker). The other great thing about this recipe? It is dead easy. Meaning, even if you aren’t that experienced in the kitchen, this is something that you can totally nail. Plus, we all know that Thanksgiving is really about the side dishes, in the US I know that a green bean casserole is pretty popular, but to be completely honest, that’s not something that really sounds that good to me. Maybe it’s the nostalgia factor that makes it such a favourite? I’m not sure, it’s not a dish we’ve ever had at my family Thanksgiving dinners.

Green Beans in Vinaigrette

Ingredients

  • 1 1/2 lbs green beans, ends trimmed
  • 2 tbsp olive oil
  • 1/2 tbsp white-wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Have a bowl/pot of cold water prepared. Steam green beans for 5-8 minutes.
  2. Quickly move the beans to cold water to stop them from cooking. Once cooled, dry off and place in your serving dish.
  3. In a bowl whisk together the oil, vinegar, mustard, salt and pepper. Once mixed, pour over beans and toss to serve.
