Mmmmm, I would take chicken thighs over chicken breasts in a flash. They are much more moist (isn’t that just the worst word? moist… moist… blegh!) Yes, they are pretty small, but it’s OK because then you can eat two, or three (or four…) of your favourite chicken thighs. This is a pretty simple recipe which just calls for a marinade which helps to keeps the meat from going dry. This chicken is the perfect partner with Meatless Monday’s kickin‘ potatoes or my favourite sweet potato fries!
Living Lou’s Authentic Chicken Thighs

4 chicken thighs
Marinade
1/4 cup olive oil
1/4 cup plain yogurt
1/2 small lemon (juice only)

1/2 tsp honey
1 clove garlic (crushed)
half green onion (chopped)
1/4 tsp dried thyme
1/4 tsp dried rosemary
freshly cracked pepper to taste
Directions

Miss Lou…What a wonderful combination of ingredients in this marinade for the chicken thighs…Another "delish" yet "easy" recipe for me to try…
These look so good!
Loving the way these chicken thighs are lookin' Lou!!
Thanks so much! Hope you like the way they taste if you ever try 'em!
Do you bake them in the marinade? Or you remove the chicken from the marinade completely once you put it in the pan?
Sorry I wasn't too clear about that, I first remove the chicken from the marinade and then bake it :)

[...] 9. Living Lou’s Authentic Chicken Thighs – I’m really partial to this recipe and was kind of surprised to see it on the list.
